Slime-free Okra (lady finger) masala

Ingredients:
Okra 250 grams
1 medium size red onion
A small cube of ginger
2 blobs of garlic
1 medium size red tomato
1 green Chilli (optional)
1 tea spoon whole cumin seeds
A pinch of Asafoetida (Optional)
1/2 tea spoon of dry fine Masalas (turmeric, cumin, coriander, paprika)
A small cup of natural Yogurt
Salt to taste
Preparation Steps:
Washed, rinse and cut Okra into small cubes
Chop onions and green chilli
Roughly paste ginger and garlic
Blend the tomato into fine puree
Cooking Steps:
Add 1 table spoon of vegetable Oil in a hot pan.
Add Okra, fry lightly.
Keep aside in a bowl.
Heat 1 table spoon of vegetable oil in the same pan.
Add whole cumin seeds, asafoetida, let it sizzle.
Add onions, sauté till onions turn pink.
Add ginger and garlic paste, let it fry.
Sprinkle little water (if getting burnt).
Add all dry masala, keep frying.
Stop the flame when oil start to release from the masala.
Let it cool for few minutes.
Add yogurt, mix well.
Turn on the flame into medium and keep stirring until boil.
Add little water and bring it a boil.
Add sautéed Okra, mix well, cover the lid, cook for 2/3 mins.
Ladies and Gents, your slime-free thick gravy Okra masala is ready to serve.
Yum with steamed basmati rice, naan or roti.
